Beef from the Shorefield Project will become available from summer 2011
The bullocks will be sold as 'quarters'.  This means that the meat from each animal will be equally split by the butcher into four equal portions - with each of the four customers receiving the same number and types of roasting joints, steaks, casserole steak, mince, sausages etc. 

The size of the joints and packages of meat can be specified by the customer to some extent - the joints can be cut to suit families of four or six for example, the mince and casserole can be vacuum packed as 500gm or 1kg packages etc.
The 'volume' of each quarter will obviously vary slightly in accordance with the size of the animal, but a good way of imagining it is as roughly two large bread baskets filled to the brim.  A quarter of a beast will therefore fill about a quarter of the average domestic chest freezer.
The costs have yet to be accurately worked out, but the per kilo price will be roughly what you would expect to pay for minced beef from a quality butcher.  This means that you will be paying the same price for everything, the fillet steak, your rib roast, your casserole steak etc will all be the same price as the mince.  It is therefore a very economic way of buying (a lot of) meat!
Animals will be slaughtered at the Islay Abattoir at Avonvoggie and butchered by Campbell butchers of Port Ellen.
